The BEST sauce for dressing raw fish…
Wahoo in Nam Jim
Serves 4 | Prep time – 10 Minutes | Cure time - 5 mins
Ingredients
300gm Fresh Wahoo (Or other white fish)
Kaffir Lime leaves - VERY finely shredded
Thai Basil flowers
Dressing
3 cloves fresh garlic
2tbsp Palm Sugar
2-3 Limes - juiced
1 green chilli
50ml fish sauce
Method
The Nam Jim
1. Place all ingredients into a nutribullet/blender and combine. Taste for the right balance of sweet, salty, savoury, sour and spicy. Adjust if necessary.
The Wahoo
1. Thinly slice even pieces of the wahoo and arrange on a plate.
2. Dress with the nam jim dressing & let cure for a couple of minutes before serving.
3. Garnish with finely shredded kaffir lime leaves and thai basil flowers.
